TurboChef Technologies has introduced Plexor – its latest advancement in ventless, automated high-speed cooking.

Plexor provides a multi-technology, flexible cooking platform in an optimised footprint, according to the brand.

Automated oven loading and unloading should ensure precise cooking, while simultaneously reducing labour and maximising kitchen efficiency.

Plexor’s modular design provides the flexibility to operate up to three different oven modules with a single user interface and with a single plug. The unit can be ordered in left, right, or centre automated loading/unloading door orientation to offer additional flexibility.

Impingement, rapid cook, and TurboVect oven modules can be configured in any combination and field swapped in the event the end-user’s menu mix or needs change.

Plexor units will become commercially available from July.

James K Pool III, chief technology and operations officer at Middleby, said: “Middleby is committed to delivering solutions that simplify our customers’ operations and optimise labour, speed of service, physical space, and product quality.”
