Portishead-based distributor, Tailor Made Catering Equipment Services, has completed a challenging project at The King’s Arms hotel, restaurant and bar in Dorchester.
The firm was first approached in 2016 to put together a kitchen and bar design to bring the property into the 21st century as part of a multi-million pound refurbishment. The construction is over 300 years old and is famed for its literary links to Thomas Hardy as well as hosting the likes of Queen Victoria, The Beatles and The Rolling Stones.
However, the building did not go willingly into its new era, throwing up a variety of challenging design issues to contend with. This led to the project taking 4 years to complete and a Tailor Made record of 32 kitchen drawing revisions.
In August 2020 even Covid-19 could not delay the installation any longer and the new open plan kitchen finally found its new home.
The centrepiece of the kitchen is a contemporary Waldorf suite comprising of solid top range ovens, fryers, and rise and fall grills all in a gloss black finish. A rotisserie grill adds theatre for the diners and the latest Rational iCombi Pro ovens is aimed at helping the chefs to produce their contemporary menu with relative ease.
Precision drawer refrigeration throughout the kitchen should ensure the chefs do not need to rummage around a conventional door fridge to find their ingredients, as they should be always on hand. Bulk refrigerated storage is taken care of by the large, bespoke coldroom and a Maidaid Evolution dishwasher aids pot washing.
Custom built fabrication in the bar includes ice wells, hand wash basins and speed rails to enable bar staff to create the signature cocktails swiftly. Gamko bottle coolers ensure beverages remain at a suitable temperature and the Maidaid undercounter glasswasher and ice machine should keep the bar flowing, even at peak times.
