Grant Instruments has introduced a range of new integrated sous vide cooking baths that are designed to be built into commercial kitchen worktops.
The sous vide built-in baths (SVE-IN) were developed as a result of what the Cambridgeshire-based company says is an increasing need to better incorporate this method of cooking into a kitchen without taking up valuable work space.
The precision cooking system comes in 12L or 26L tanks and can be retro-fitted, while controls are located on the front panel for quick selection of required temperatures.
Based on the current SVE Expert range, the sous vide baths feature a timer with an audible alarm, three programmable temperature pre-sets, and a fixed temperature cut-out for protection should the bath run dry or low water level.
Roy Homent, catering sales manager at Grant Instruments, said the built-in baths have been designed in collaboration with chefs and tested in their kitchens.
“Sous vide baths are an essential piece of equipment for the modern professional kitchen as they not only provide consistent, quality results and aid in workflow, but also create less heat in the kitchen -therefore saving energy. The built-in baths offer space saving, which in smaller kitchens is invaluable.”
