Gastronomy Plus, the owner of Sous Vide Tools, has acquired the Bertha charcoal ovens brand.
The ovens will continue to be manufactured in the north-west of England and to the same standards that have established Bertha in the charcoal oven market.
Gastronomy Plus MD Alex Shannon said: “As well as bringing fantastic flavours to whatever it cooks, the Bertha oven is the ultimate finishing technique for food that has been cooked sous vide, making it the perfect addition to our range of vacuum packing machines, water baths and blast chillers.
“Like the other products in our range the Bertha oven is a very specialised piece of equipment and so we have added a new member to the sales team specifically to work with dealers, consultants and end users to ensure that they know everything there is to know about this very particular method of cooking.”
The Bertha oven, which can be fuelled by either wood or charcoal (Sumi Bincho is recommended), has been manufactured in the UK since 2008 and can be found in restaurant and hotel kitchens around the world where it is used to sear, BBQ, roast, slow cook, and hot or cold smoke.
Shannon concluded: “We expect cooking over wood and charcoal to remain popular and are already working on exciting plans to extend the Bertha range in 2022 so that even more chefs can enjoy the benefits of this unique way of cooking and create dishes with a real point of difference.”
