Shine Food Machinery has recently finished a large outfit it undertook for Cardiff and Vale College at its Cardiff City Centre Campus.
The distributor was commissioned through the contractor, Willmott Dixon Wales and West, to design and install two skills training kitchens, a restaurant kitchen and bar, butchery, bakery, refectory and cafeteria on the first and fifth floors of the new facility.
The design process began in 2013 and just over 2 years later the installation was concluded.
The fifth floor restaurant kitchen, which showcases a panoramic view of the city, features a Bonnet Maestro Evolution cooking suite, with individual Bonnet gas and electric induction stations included within the training kitchens. The remainder of prime cooking equipment was provided by Rational UK.
Warewashing was supplied by both Wexiodisk UK and Winterhalter UK with a variety of pass through, undercounter and utensil washing units installed.
A wide range of refrigeration cabinets was provided by Williams Refrigeration including counter refrigerators, reach in cabinets and blast chiller with retarder provers. All coldroom requirements were handled by Foster Coldstores.
Preparation, butchery and sous vide machinery was selected from the Sammic and Metcalfe portfolios.
Shine’s sales and marketing manager, Chris Hinton, commented: “All the equipment was carefully selected with a ‘best fit’ policy adopted to ensure that the equipment supplied would give the students the varied options they will find when it is their time to enter the catering industry.”
Shine provided all the fabrication and ventilation canopies. Hinton added: “This was without doubt the biggest challenge, ensuring all canopies were manufactured within DW172 guidelines while making sure their low profile allowed maximum visibility within the training kitchens. This was one of the major aims of the college.
