Sammic prepares cutting update

Sammic’s updated vegetable preparation machines should require less force for cutting.

Sammic has launched an updated range of vegetable preparation machines with a design evolved from the current range.

The latest models have been developed in collaboration with Sammic’s corporate chef Enrique Fleischmann and Fleischmann’s Cooking Group, with emphasis placed on improving cutting, hygiene and efficiency.

In developing the new range, all the cuts that the different disc and grid combinations offer have been studied in detail. ​

The new machine is designed with tighter tolerances, together with the improvements to the discs and grids.

This should mean that less force is required for cutting, obtaining clean and uniform cuts with what is said to be practically no shrinkage. The combination of the FC discs and their corresponding FMC grids is said to enable precise and clean cube cuts to be obtained, without generating liquid. ​

In addition, exclusive SH shredding discs have been developed, claimed to be the most hygienic on the market. These discs can be removed without using tools, which should make them easy to clean in the dishwasher and prevent raw material from accumulating.

The variable speed cutters have a brushless motor. This engine is designed to be efficient, as it should maintain torque throughout the entire speed range. The machine is also designed with the exclusive ‘force control system’: the screen shows the force exerted by the machine at all times, and an acoustic warning can be programmed to a certain force level to optimise the cutting result by only using the correct force on each product.

Brushless motors also occupy less space, weigh less, are quieter and, since they don’t require ventilation, the air/water-tightness on the machines should be better.

As in the previous range, the range of cutters is complemented with combined veg prep and food processor models. They all have the new adjustments, new discs and grids and, since they are all variable-speed models, they have all the benefits of brushless technology.

They are available with different types of cutter head – combi models have a 5.5 or 8 litre hopper and advanced functions
