The restaurant operations of one of London’s top boutique hotels is firing on all cylinders thanks to a kitchen installation carried out by Essex catering equipment distributor Salix.
The Basildon-based firm was called into action when the Ace Group, which operates hotels throughout the US, decided to open its first UK site in Shoreditch.
Ace has transformed what was an anonymous four-star hotel into one of London’s trendiest music and dining venues.
Foodservice consultants Tricon specified the catering facilities for the 268-bedroom property, which includes a gallery bar, cafe, destination restaurant and basement live music venue.
Salix managed the entire fit-out, which included the installation of state-of-the-art warewashing facilities to cope with the hotel’s dirty wares.
Kit used for the job included a Meiko K200Pi dishwasher with a 150-rack-an-hour throughput. The machines also boasts a mechanised dryer and heat pump module, enabling it to be operated vent free.
A DV80.2-GiO pass-through dishwasher and two FV40.2G-GiO undercounter machines were also commissioned for the bar and cafe areas.
Salix project manager, Paul Williams, said: “Everything went very smoothly, starting with the delivery from Meiko, which was exactly on time. Space was extremely tight in the basement. To facilitate access, the rack transport machine was split into four sections and re-assembled on site.”
