Catering equipment distributor Salix is working its magic to get a new kitchen open in time for the launch of ROKA Aldwych later this month.
It is 10 years since Rainer Becker bought the contemporary Japanese robatayaki cuisine concept to London with a restaurant in Charlotte Street.
ROKA Aldwych is one of two new sites to open in London this year. It will be the largest of the three restaurants, with the kitchen able to serve 150 covers.
Basildon-based Salix is currently constructing the kitchen ahead of the official opening in late October.
A central robata grill will embrace “the symbolic heart” of ROKA, according to the restaurant.
To complement the food from the robata, a selection of expertly prepared sushi and sashimi will also be available from the kitchen.
