Sainsbury’s new kitchen concept


Standex Food Service Equipment has supplied BKI CombiKing ovens and rotisseries to Sainsbury’s new and currently largest store at Crayford.

The equipment was installed as part of the launch of the retailer’s new Food Service Kitchen concept.

The temperature controlled kitchen, which is located alongside the new service counters concept, further enhances Sainsbury’s industry leading reputation for fresh food, whilst panoramic glass panels provide total visibility of the food preparation process.

The kitchen prepares fresh meals, such as lasagne and fish pie, which are served in the new concept cafe and from the new ‘fresh meals’ counter. Sandwiches, salads, pizza and party platters are also prepared in the kitchen.

Standex supplied two stacked modules, each comprising a BKI VGG8 rotisserie mounted on a BKI CombiKing 6 grid oven, as well as a CombiPlus unit with integrated 6 grid and 10 grid ovens. The rotisseries and ovens are located behind the service counter to maximise cooking theatre, promoting impulse purchases.

The rotisseries are used to roast up to 240 whole chickens per day, which are sold as part of the store’s hot takeaway food offer. The CombiKing ovens cook a range of products, including gammon, chicken p

ortions, ribs, protein components for convenience meals, pies and pastries. Standex worked closely with its Bakers Pride oven distributor, Jestic Foodservice Equipment, who installed a double deck pizza oven, for baking freshly prepared takeaway pizza.

Sainsbury’s Food Service Kitchen Manager stated that the pass through feature on the rotisseries and CombiKing ovens was an important feature in the specification process.

“Food safety is of paramount importance to Sainsbury’s and the ability to load raw product to the rear of the ovens and unload cooked food from the front of the ovens helps us to eliminate the possibility of cross contamination,” she said. “Simple, user-friendly touch screen programming, speed of cooking and ease of cleaning were also factors which influenced our decision to specify the equipment.”

She added: “Standex was also able to provide rotisserie ovens stacked on combi-ovens in the configuration we required to create maximum visibility and theatre.”

Standex worked closely within Sainsbury’s tight deadlines in the development of the Food Service Kitchen concept, providing training for the retailer’s and third party personnel at Standex’s dedicated training facility in Reading and in-store.
