Retigo’s newly-launched latest generation of Vision combi ovens are said to have been developed to provide benefits required by professional chefs.
New features include the Vision Perfect Cooking active humidity control, an advanced steam generation system, in-built heat exchanger, fan timing, multitasking, claimed easy cooking, a new dehumidification system, seven fan speeds and a six-point core probe.
The manufacturer reported these were designed and fine-tuned in cooperation with chefs to ensure prepared food has the required colour, is juicy, crispy and healthy with minimal fat.
The MyVision controls include an 8inch colour display which is designed to respond even when users’ hands are greasy or they have gloves on. The main screen is said to be intuitive and swiftly responsive, plus there is an option to customise the main menu to suit individual sites’ needs.
User profiles can be created, while the multitasking function should allow chefs to work through a combi oven menu even when cooking.
The oven was designed with safety in mind, which is why the racks are sideways-oriented. Retigo says this results in a lower lever force effect and easier handling. It is also possible to simultaneously place 2x 1/2 GNs or 3x 1/3 GNs in one rack using wire shelving or a Retigo GN adapter. This means that any of the trays can be taken out in any order, plus three different timers can be set for each rack.
A minimum of plastic parts was used, while the interior and exterior were constructed using AISI 304 and AISI 316 stainless steel.
Further elements of the new combis are designed to provide savings throughout the units’ lifetime. These include triple-glazed door glass, 50mm-thick eco friendly thermal insulation, optimised power regulation, what is said to be low consumption automatic cleaning and affordable price of accessories, cleaning chemicals and spare parts.
Six product sizes are available, including a fourth generation of the 623 size, plus advanced boiler or advanced direct steam generation options, two model lines, electric and new gas models.
The new Retigo Vision combi ovens will be on display at the Commercial Kitchen show at the NEC Birmingham tomorrow and Wednesday on stand F15.
