Rational steamers do the trick for London bakery


Emerging London bakery and restaurant chain Fait Maison has nailed its colours to Rational’s mast by opting for the brand’s SelfCookingCenter whitefficiency combi steamers to head its equipment fleet.

The company, which offers a menu mixing classic French with Mediterranean cuisine and also provides take away, deli and lunch catering through its sister brand Blanche Eatery, believes the 20-grid floor standing units support its emphasis on natural, healthy, freshly-made food.

“Throughout the group we are serving up to 2,000 customers a day,” said managing director Mohamed Osman. “They know our ethos: we make things from scratch, we don’t cut corners. To keep up our reputation we only want the best – not only in terms of ingredients, but also in terms of quality of production. Combi steaming is the best way to preserve the food’s natural goodness and nutrients.”

Fait Maison is using the Rational ovens to cook a wide range of products, including scones, pastries, pies, steaks and roasts.

Osman said he had bought “a lot of catering equipment over the years” but rated Rational’s combi ovens for their consistency and efficiency.

He said that with croissants, for example, Fait Maison had seen a 10% saving in ingredients without compromising on the quality. “The croissants come out about 20% bigger from the Rational than from our old ovens,” he said. “So not only are they better, but we also need less dough per portion.”
