Rational’s multifunctional VarioCookingCenter cooking appliance will be the star of its stand at the Professional Kitchen Show next Tuesday and Wednesday.

On stand 310 in the exhibition, to be held at the Birmingham NEC, the manufacturer will be emphasising the VarioCookingCenter, which it feels delivers concentrated power with maximum precision that responds to operators’ requirements.

The appliance heats up from 0°C to 200°C in less than 2.5 minutes and holds the temperature even if a lot of cold food is loaded. The mesh-like structure of the patented VarioBoost heating system should quickly distribute the heat over the pan base and evenly onto the food.

On the command of the built-in cooking intelligence, the system immediately withdraws the heat to prevent sticking and overcooking.

Rational UK MD Simon Lohse said: “Thanks to the unique heating system, the VarioCookingCenter reaches the desired temperature up to four times faster, and in doing so, consumes up to 40% less power than conventional kitchen appliances.

Due to the heating power, the temperature is designed to remain constant and the meat juices should not run out, which also means up to an estimated 17% less weight loss.

As the VarioCookingCenter replaces several traditional cooking appliances, this should create space in the kitchen.

It can be teamed with the Rational SelfCookingCenter combi oven, which can be operated intuitively by the user due to the same control panel. Together they are said to cover practically every application in the professional kitchen.
