Porkka has launched an advanced generation of competitively-priced blast chillers and blast freezers designed to meet the needs of high volume operators from commercial kitchens to food processors.
Cooling capacities range from 30kg/90 minutes to 2 x 100kg/90 minutes, according to the company.
The BC (blast chillers) and BC/BF (blast chiller/freezer) ranges have been designed for ease and simplicity of operation.
All models feature Porkka’s SH microprocessor controls, offering up to eight programmes for selecting the optimum blast chilling method to suit the food being chilled. Controllers are equipped with alarms and allow visual monitoring of the process functions.
The 10 models in the BC and BC/BF Series offer a choice for all requirements from the 720SH reach in cabinets, designed for use with GN 1/1 pans or trays, to the 48-200SH pass-through versions with two doors and a sliding dividing wall for use with either 2 x GN 1/1 or 2 x GN 2/1 trolleys.
Both sections on the 48-200SH rooms can be operated independently on separate programmes, enabling simultaneous chilling and freezing in separate halves of the unit.
Standard on all models is a built-in automatic defrosting period after processing is complete, followed by a holding mode so that the units do not have to be emptied immediately, thus increasing overall storage capacity.
For long life and ease of cleaning, visible external and internal surfaces on all cabinets and rooms are manufactured with stainless steel grade AISI 304. Reach-in cabinets are supplied with onboard condensing units or can be connected to a central cooling system.
All other models offer the choice of connection to central plant or to a remote condensing unit.
