Hot holding specialist the Alan Nuttall Partnership has invested over £250,000 in its new Foodservice Innovation Centre, including a state of the art development kitchen.
The 2,800ft2 facility is based in Leicestershire and boasts an in-house culinary team delivering services around food processes, cooking and preparation, packaging and display. As well as the development kitchen, it features meeting and conference facilities and an innovation display area including a hot food-to-go kitchen.
The facility has a variety of cooking equipment from traditional commercial kitchen appliances to the latest convection, regeneration and microwave with a variety of oven brands. This ensures the development chefs can match any operator’s facility in the development kitchen, delivering accurate test results for visitors to take away and implement when required.
With the new centre, Nuttall’s will be aiming to support businesses offering food-to-go solutions, using its Flexeserve Zone energy-saving hot food display cabinet. Visitors receive test reports which give a detailed breakdown of the full operation, equipment used and graphs showing the data logged during hot holding in the Flexeserve Zone Unit and sensory results.
Development chef Warwick Wakefield said: “The centre taps into our vast technical and commercial expertise to take a hot food idea from concept development to reality or improve on an existing product range and process.”
