No pulling the hood over Alto-Shaam’s eyes


Alto-Shaam has fitted a new integrated catalytic converter to its CT Express Combitherm, allowing the unit to operate without an extraction fan or hoods.

Whereas an extraction fan or hood tackles unwanted fumes through targeted ventilation, the CT Express’ catalytic converter does so by ‘scrubbing’ the airstream through a completely ventless, UL-certified system.

The unit’s compact size makes it flexible in the workplace and with everything contained in one device, it’s ideal not just for smaller kitchens, but also front-of-house cooking and any catering outlet looking to maximise space.

The company’s UK distributor FEM says that the integrated catalytic converter isn‘t the only notable aspect of the oven.

Its ‘Gold-n-Brown’ feature automatically adjusts humidity during cooking in order to achieve the desired colour of the food, from roast chicken to French fries.

This browning process is applicable to products that take five minutes or longer to cook and can be programmed into any cooking cycle.
