West London-based Nelson Catering Equipment has completed the design and installation of Aladino’s restaurant in Kensington, the first fine dining Alexandrian venue in the city.
Chef and restaurateur, Aladin Barakat, hired Nelson to assist with turning what had previously been operated partially as a Thai restaurant into his newest venue, after having enjoyed success with a 500-seater restaurant in Alexandria itself.
However, the condition of the building was generally very poor and required complete renovation and modernisation, with the basement having been used for both cooking and storage. Unfortunately, nothing of the original kitchen was salvageable and the space had to be completely gutted.
Nelson worked with Barakat to evolve his ideas as the necessary building works to the site progressed and, after exploring the various options, a final design and specification was agreed.
The distributor drew upon its experience in designing kitchens of all manner of shapes and sizes to maximise the awkwardly-shaped basement to provide preparation, cooking, storage and warewashing zones that would be home to six chefs and two kitchen porters at any one time.
Counter fridges and freezers are used in the preparation zone to maximise worktop space while two upright models are sited next to the store area. A Blue Seal Evolution six burner range cooker, a robata grill, a Blue Seal double fryer and salamander and a six grid combination oven make up the cooking zone and a Nelson Advantage Pass Through, complete with tabling, forms the basis of the dishwashing area.
Nelson also provided stainless steel fabrication throughout to ensure a seamless fit and to provide as much storage and shelving as possible.
