Irish distributor Murco Catering Equipment has saved a local hotel in Waterford from an under-powered warewasher.
The Viking Hotel is often used by business visitors, due to its proximity to the city’s main industrial park, therefore the pressure on the wash-up is demanding.
A few years ago, the hotel’s previous owners reportedly decided to go against advice and purchase a small conveyor machine from another distributor that did not survey the site, resulting in a machine that did not have the capacity to facilitate the large volumes coming into the kitchen.
Therefore Alan Murphy from Murco Catering Equipment, along with Dermot Bolger (facilities and maintenance manager at the Viking Hotel) came up with a dishwashing solution that would be able to handle the capacity being thrown at it.
Upon sizing what were the requirements, it was recommended that they install a Krupps EVO301 tunnel machine. Plus they needed solve the bottleneck constantly at the door to the kitchen where the old system had its drop off.
After consulting with the client, the entire space was mirrored so new machine could slot in under existing condense canopy.
Along with a new front of house make over, the system is now said to be working as it should have been from day one.
