Bakery specialist Mono Equipment has launched several new products for this niche sector.
One of the introductions, the Artisan Bread System, has been designed for compact kitchens. This comprises a 4/5 Tray Convection Oven and a single Harmony Deck Oven – suitable for baking an artisan breads, viennoiserie and patisserie. Each oven features a colour touch screen controller, together with an array of energy saving features.
This coincides with the recent launch of the manufacturer’s Compact Convection Ovens, which are designed to meet the needs of today’s food-2-go, café, bakery and restaurant culture. They are available with a choice of footprints, tray sizes and capacities to suit most needs and each oven is fan assisted which ensures uniform heat distribution inside the stainless steel chamber. Mono has just joined Pro Foodservice Reps’ roster for the group to represent this series.
Furthermore, the firm’s new CakePortioner is designed to reduce the time and effort of slicing cakes. Requiring one person to operate, this fully automated machine will slice up to 120 fresh cakes per hour and between two to 16 slices in approximately 30 seconds.
