MKN hopes to consign traditional or self-condensing hoods to history by integrating them into its combi ovens.
The patented HoodIn solution will work in conjunction with MKN’s HansDampf Compact and Junior combi ovens to offer the same extraction as an overhead hood.
A steam exhaust system also controls steam build up within the oven so that chefs don’t face a boiling blast when they open the door.
“Compared to other conventional, space-taking and expensive solutions, where a canopy is required, the new HoodIn technology is master stroke. With the patented MKN technology for integrated steam condensation, caterers can now do away with the traditional extraction hood as long as the room has general ventilation,” said Wayne Bennett, UK projects director at MKN.
“This is a big advantage in refurbishment and new builds alike where specialist extraction is not possible or too costly to make the project viable. This technology available on our 6 1/1 GN compact or 6 2/3 GN Junior models,” he added.
