MCS to present Zernike launches at the Restaurant Show

MCS Technical Products is launching the Zernike Klima Meat Aging Cabinet at the Restaurant Show.

MCS Technical Products will be launching the Klima Meat Aging Cabinet and Windry Glass and Cutlery Dryer, both by Zernike, on stand GF21 at the Restaurant Show, London Olympia, from Monday 30 September to Wednesday 2 October.

The Klima Meat Aging Cabinet is designed to produce healthy and naturally cured meat and cheese. Temperature and humidity can be set via the electronic control system, which also manages the internal air circulation.

The patented Oxigenklima system makes it possible to create a suitable climate for any kind or age of meat. The humidity generator should create an even distribution of the humidity in each point of the aging chamber.

The result should be optimal aging with a weight loss percentage (around 3-4%) and a reduction in productive times and costs. The system is said to deliver a measured and planned oxygenation of the meat, which kills micro-organisms and moulds.

Unlike other cabinets on the market, which are claimed to only age 2 year old meat up to 30 days maximum, the Klima cabinet should allows older meat which is 3, 4 or 5 years old to be aged up to and above 75 days. This is said to produce tender succulent meat that can be eaten as carpaccio.

David Jenkins, development chef, MCS Technical Products said: “These new Klima cabinets are very flexible. You can mature products with different aging times without interrupting the production chain. These cabinets meet the consumer demand for dry aged beef. They can also be used to produce artisan cheese, game, prosciutto and other charcuterie.”

While the Windry automatic glass and cutlery dryer is designed to quickly produce dried glasses and cutlery without smears. It has an electronic display which should be easy to use and can dry cutlery and glasses of all shapes and sizes. The rapid stream of heated air is said to dry without leaving any fingerprints or marks. It should free up operator staff for other tasks, reducing the risk of cross contamination and breakages by avoiding manual drying.

It is available in both free-installation models and models which can hooked up to hood dishwashers. MCS says the best results depend on the water quality used in the dishwashing operation, so a reverse osmosis purifier is recommended for dishwashers which can eliminate limescale and mineral salts.

Also on the stand will be CookTek induction cooking and holding equipment, FlashGrill electric griddles, Dolphin induction-compatible chafing dishes and the latest MCS Ventilated Cooking Centre.
