Mareno is at Host on stand L20 in hall 5 of the Fieramilano to launch two new innovations – ‘My Tutor’ and ‘IFry’.
The cooking equipment manufacturer’s main focus is to help operators manage their Mareno equipment in the most effective way possible and so the ‘My Tutor’ app was created to put the kitchen in direct contact with the operator’s service partner.
In the case of equipment failure ‘My Tutor’, which runs on a tablet, automatically notifies the service provider of the issue so that a repair can be effected as quickly as possible and any downtime minimised.
‘My Tutor’ will also remind kitchen staff of any maintenance tasks, and when to do them. The device comes pre-loaded with the technical specifications of each piece of equipment but, as no two kitchens are the same, it also allows for customisation to make allowance for ‘local’ conditions. For example, something as simple as descaling can depend on the hardness of water in a certain area.
The other launch is Mareno IFry units, which have gas burners outside the well that should result in gentler heat transmission so that the oil lasts longer. The units are also designed to be easier to clean.
In Mareno’s electric fryers the heating elements are inside the well for direct heat transmission. There’s said to be good power density for maximum performance and the new heating elements are shaped in order to maintain contact with as much oil as possible rather than creating ‘hot spots’ in the immediate vicinity of the elements which ‘stress’ the oil.
Since the key to producing excellent frying results is the quality of the oil, IFry also includes models with integrated filtration to slow down oil degradation. Filtering takes just 5 minutes and can take place during service, at a temperature of 185°C.
IFry products are equipped with a 7-inch electronic touchscreen display with a graphic interface and innovative software that should enable easy communication with the operator and the automation of numerous tasks.
