A new range of Pira charcoal ovens was highlighted at last week’s Commercial Kitchen show.

Supplied by RB Distributors, the Lux series is available in two sizes, both of which are available in a black and stainless steel finish.

The Pira Lux 45 is suitable for 90 covers, whilst the Pira Lux 50 can cater for up to 120 covers.

The various shelf positions should enable multi-level cooking without the transfer of flavours, as well as cooking large quantities of up to 30kg of meat, fish or vegetables.

In addition, the new charcoal ovens feature a large panoramic glass viewing window which could add theatre to the cooking process.

As there is no need to keep opening the door to check on dishes, it helps to maintain the internal temperature, meaning less charcoal should be needed to keep the desired temperature.

The range also benefits from having both an internal firebreak and air flow regulator.

Depending on the establishment, external ones may still be required and are available to purchase separately, along with other accessories.

An internal oil drainage channel is designed to direct the fat into a removable, dishwasher-safe grease tray.

An optional grooved tray on which to cook fatty foods helps to channel away grease and is also suitable for creating patterns on items such as meat and chicken.
