Leading chef sets up kitchen consultancy


Damian Wawrzyniak, founder of the Fine Art of Dining, TV presenter and master craftsman at Guild for Chefs UK, is launching his own restaurant consultancy.

Wawrzyniak is currently chef director for a new Culinary Academy which will open in London next year and could previously be found in the kitchens of two Michelin Star restaurants and the ‘World’s Best Restaurant’, Noma in Copenhagen.

The restaurant and food consultancy he has set up — called The Fine Art of Dining Consultancy — is aimed at helping catering services, hotels and restaurants take their kitchens to the next level by tapping into his expertise.

Consultancy services will include custom design, staff training, menu development, as well as advice in areas such as health and safety regulations.

Wawrzyniak said: “If you are in the middle of planning a new restaurant our professional advice can take it from concept to opening night, negating the pit falls that see many new food businesses struggling a few months after start up or re-launch.”

He added that his team would work hand-in-hand with new and existing kitchens to develop sustainable business plans and strategies for success.

This includes creating a multi-point plan to direct restaurant activities and concepts, such as interior design, kitchen design and pass design.
