Lakes redesigns four-star hotel in record time

Lakes specified a Mareno Star 90 suite, Rational combi oven and Adande refrigerated drawers for the Borrowdale Gates Hotel.

Lakes Catering Maintenance has teamed up with Grande Cuisine to deliver a centre island and kitchen redesign in record time at a four-star country house hotel.

The challenging project was at the Borrowdale Gates Hotel, which is set in Borrowdale valley close to the shores of Derwent Water.

Lakes had a 2-week window to rip out the existing kitchen, dig up the floor, lay new drains and then install new Altro non slip safety floor, extract ventilation system, along with the installation and commissioning of a new centre island cooking suite which consisted primarily of a Mareno Star 90 gas suite, Rational combi oven and Adande refrigerated drawers.

The distributor’s MD Leigh Howard commented: “We worked closely with Grande Cuisine and the head chef, Chris Standhaven to achieve his ideal layout and configuration for the modules that made up the final suite.

“With the Christmas shutdown period all the loose ends had to be tied up well in advance, so we could hit the ground running for the shutdown window.

“The project was a tight schedule, given the flooring preparation works required before we could commence the main installation of the upgrade to the gas pipe work and main equipment, but we are pleased to have been able to hand over 3 days ahead of plan.”

Following a joint site hand over with Steve Hobbs from Grande Cuisine the hotel opened for guests on 24 January 2020.

Hobbs commented: “It’s a fabulous installation on a site that had several challenges to overcome and a tight turnaround – the client had specific objectives to achieve with the installation and working in an environment where no three phase power is available proved a little challenging equipment specification-wise.

“The Mareno cook suite comprises all gas elements including a mixture of solid tops and open burner top oven ranges, along with fryers and pasta cooker. The set-up of the suite is specific to head chef Chris Standhaven’s vision of how the kitchen operates with a classical style set up of meat, fish, garnish and sauce sections around the suite.”

The Borrowdale Gate is one of three hotels in the region that are owned by Providence Hospitality, a South African-based hospitality business.

Lakes also simultaneously completed a further five kitchen upgrades throughout January.
