Küppersbusch Großküchentechnik’s new generation of multifunctional tilting bratt pans have been lauded as the ‘Best of 2018’ in Germany’s Industriepreis industrial awards.
The unit is claimed to heat up to 230°C in 4.5 minutes, twice as fast as the last model, and have 66% more performance than previous generations while using less energy.
Küppersbusch MD Hannes Kolb commented: “We have put a lot of development work and efforts into the new multifunctional tilting bratt pan and are very proud of this award.”
Moreover the new units are designed to have a flexible scope of application. Kolb added: “Be it roasted goulash, gently prepared boiled filet or risotto – anything goes.”
Rice pudding, Kaiserschmarrn (sweet cut-up pan cakes with raisins) or pancakes can be prepared without sticking to the pan base, thanks to a claimed exact regulation of the temperature and consistent heat distribution. This is due to special duplex non-stick surface treatment on the pan base.
The bratt pans are controlled by the KüppersbuschCookingIntelligence (KCI) touch panel. Kolb added: “We have consciously decided on a uniform control within our modular product line. Thus the kitchen crew will not be forced to adapt, and thanks to the icons, international or untrained staff members can also work with the appliances.”
The KCI display is designed to be at a convenient height, mounted on a stable supporting arm, and sealed to protect 100% against splashes and condensing water. The Küppersbusch team has also integrated space to put a GN container directly below the KCI control.
The bratt pans can be integrated into both Küppersbusch’s PremiumLine 850 850mm product series and bespoke Palmarium installations.
