Resellers of Carpigiani machines now have another option for customers after the manufacturer launched a piece of equipment that promises to produce “homemade traditional artisan ice cream” in double-quick time.
The Labo 812E is capable of making gourmet, artisan ice cream and fruit sorbets in a matter of minutes, while chefs have the flexibility to experiment with flavours.
Gary Ingram, sales director at Carpigiani, says the kit will give operators the flexibility to broaden their dessert menus as and when they need to.
“What could be more delightful than the front of house team bringing a dish of ice cream, made in the kitchen moments earlier and serving it at the table in front of intrigued customers?,” he said. “The Labo 812E allows for just that, whilst ensuring minimal space is required, something that’s at a premium in many kitchen.”
Combining a footprint of just 365mm x 715mm x 660mm, the compact counter batch freezer has been designed with the same technology as the larger commercial models, while ensuring optimum levels of space saving for kitchens where the footprint is small.
Operators simply pour the mix into the machine, turn the switch and wait for an extraction signal. A built-in H.O.M. automatic ice cream consistency control always ensures the Labo 812E maintains the quality of ice cream and sorbets.
Carpigiani, which is owned by the Ali Group, is capable of producing up to 17 litres of finished mix per hour.
