Dartford-based distributor KCCJ is in the process of completing a project to design and outfit the main kitchen at The Sopwell House Hotel near St Albans.
The dealer started on the AB Hotels-owned site just after Christmas and aims to complete the major refurbishment towards the end of this month, taking the existing space’s shell back to bare walls during the process.
A Mibrasa charcoal oven supplied by Ascentia will sit on the main cook line alongside other items of prime cooking equipment, enabling the kitchen brigade to produce a varied menu.
The chosen model is set on a cupboard unit with a resting rack above providing a complete workstation.
The new kitchen will also have a Moretti bakery tower installed, which consists of a bakery convection oven, a stone based deck oven and a proving cabinet.
The Moretti unit is designed to provide the kitchen with a total solution for all its patisserie and viennoiserie production in one footprint.
AB Hotels’ procurement manager, Nicholas Smith, and executive head chef Gopi Chandran visited Ascentia as part of their selection process and spent some time at the company’s development kitchen which is led by Scott Park.
Park commented: “We invested time exploring the versatility of the ovens, demonstrating their flexibility from seafood and meats to vegetables and desserts.
