Eastleigh-based HCE Foodservice Equipment has installed a Cuppone Michelangelo electric pizza oven to The All England Lawn Tennis Club, the venue for the Wimbledon tennis championships.
Linda Lewis Kitchens provided the equipment, following its previous supply of the Club’s existing Max pizza oven. The supplier also carried out product training for the Wimbledon team.
The Michelangelo – the 2014 equivalent of the Max – is gearing up to serve pizzas to the world’s media, within the venue’s new 24-hour restaurant, dedicated to press and broadcasters.
The oven is said to have the capacity to cook pasta dishes, jacket potatoes, fish, meat, vegetables and desserts, plus warming other pre-prepared dishes, as well as its staples: pizza, calzone and garlic bread. It has a digital control panel with 100 programmes and full-length double-glazed panoramic window, as well as an end of cooking buzzer, to alert the chefs when food is ready.
The chef can individually control the top and bottom element of each deck, while a heat regeneration system is claimed to immediately circulate heat back inside the oven when the door is opened.
