Essex-based dealer Grey Simmonds and pizza and catering equipment supplier LLK have collaborated on a recent project in Thames Ditton.
The companies teamed up to help budding restauranteur, Sam Nicholson, transform an independent pub into ‘Ditto’ – a high-class pizza operation with an eclectic offering of Neapolitan-inspired pizza.
James Carlin, group sales manager of Grey Simmonds, commenced the project by listening to Nicholson’s vision and assimilating what was required to achieve the concept.
Carlin decided that the best way to bring the pizza operation ambitions to fruition was to bring in LLK. Natalie White, LLK’s operation’s manager, met with Carlin and narrowed down which of LLK’s range of solutions were suitable to meet his client’s brief. She recommended the Italian designed and hand-built LLK Verrocchio gas living flame pizza oven.
White commented: “James approached me with very specific space availability and a very tight schedule meaning we had to work closely with the factory in Italy to ensure deadlines for the project were met.”
LLK further recommended that Nicholson attend a consultancy course at the supplier’s headquarters on the outskirts of Manchester. He and and his colleague, Dimitri, attended an intensive 3-day pizza masterclass with LLK’s consultancy chef, Fabio Aurelio, where they immersed themselves in ingredient selection, menu development and optimum cooking procedures.
Nicholson commented: “By day three of our consultancy course with Fabio, I was confident to say that we could produce the quality of product we are offering our customers.”
While Carlin concluded: “Our customer is now extremely happy with their new addition and is very impressed with the quality of the pizzas. During their training with Fabio, they were shown exactly how to make the dough and pizzas from scratch to produce the best quality result possible. This training really added to the quality of support our customer was shown. We would absolutely recommend LLK to any of our customers.”
Since revealing Ditto’s renovation to the world, Nicholson and his team have reported that diners have offered glowing feedback on the handmade pizzas cooked before their eyes in the showpiece oven.
