Hertfordshire-based Gratte Brothers came riding in on its white charger to rescue Knights Garden Centre’s new restaurant this year in Godstone, Surrey.
The distributor was originally selected by a consultant to offer a speculative design and quotation based on a brief given by the client.
Area sales manager, Stephen Ryan, took the lead on this scheme and commented: “We created what was seen as the most suitable and effective layout and then we were invited to develop this design and finalise a cost.”
The major scheme’s overall price ended up around £100,000, and Gratte Brothers was duly chosen to develop the design and installation.
“Our design was key to the project,” said Ryan. “As was the type of equipment and setup chosen to suit the offering they were looking for, including the layout and flow of the kitchen space.
“This also had to take into account the front counter which we helped with, and also the restaurant layout.”
The overall workscope comprised designing, supplying and installing a commercial kitchen area for a large restaurant which would have to cater for up to 150 covers with full table service.
The dealer therefore had to design and specify factors including a cooking island, preparation areas, a hot pass through a wall, the coldstore area, a dry store area, and a wash up area comprising both a plate and a pan wash.
According to Ryan: “We had to ensure the kitchen had the correct capacity of cooking surface as well as prep surface in order to ensure it could meet its demands at full capacity.”
