Sous Vide Tools has launched the Cucina range of chamber vacuum packers, which combines countertop convenience with what is said to be precision vacuum sensor technology.
Claimed to be rapid and cost effective, the compact range is designed for medium duty work in restaurants, gastropubs, hotels and hospitals for example. The large domed lid of the unit opens and closes semi-automatically for safety and speed. The operator simply selects the desired level of vacuum and closes the lid.
The vacuum sensor monitors the vacuum within, displaying it digitally, and the sealing bar seals the pouch and cuts the bag to size when the selected level is reached. The lid then opens again to take the next pouch. The claimed advantage of the sensor is a short cycle time. Cycles range from 13 to 40 seconds depending on the model and chosen vacuum level.
There are four models in the Cucina collection, ranging from the small 280 with a 280mm sealing bar and a 20 to 40 second cycle, to the large 620 offering a 15 to 35 second cycle.
All models are designed to be robust, made entirely from stainless steel with rounded corners to avoid trapped food debris. Claimed to be user friendly and low maintenance, the units come with a 2-year parts and labour warranty.
