Gram has begun researching the fourth edition of its industry Green Paper — and revealed that it will publish the results at Hotelympia next year.

The company says The Gram Green Paper represents one of the most in-depth pieces of research into sustainability in the foodservice sector.

Like previous editions, it intends to provide a unique insight into the sustainability policies of the eating out industry and share best practices across sectors within the market place.

Gram is appealing to caterers of all types to get involved with the research and lend their voice to the debate. It said anybody from a chef in a Michelin Star restaurant to the manager in a B&I contract caterer was welcome to fill in its online questionnaire.

Participants who complete the survey in full before 20 December will be entered into a draw to win £400 worth of high street vouchers.

Gram said it will continue to work with associations such as the Considerate Hoteliers, TUCO, FSCI, the NACC and the SRA to provide an extensive and representative view of green practices.
