Evolution Elite: another innovation in open frying

Delivering outstanding energy savings, ongoing kitchen efficiencies and achieving consistent, excellent results, the Evolution Elite range from Henny Penny, has been leading the way in open fryer technology since its launch a couple of years ago.

Driving further innovation across the sector, Henny Penny has now announced the launch of a series of technological updates to the Evolution Elite range, which includes wireless digital connectivity, automated oil quality testing and a new intuitive control panel.

Available across the range of open fryers, the new iControl system allows an operator to store up to 40 pre-set cook programmes and modes such as idle and melt. Featuring specific time and temperature parameters, the programmes are ideally suited for groups, chains and franchises looking for consistency across an entire estate. Updated via the built-in USB connectivity, the system enables changes to be made quickly and simply when a new menu is launched.

Having already led the market with features like the automatic load compensation technology, Henny Penny has once again revolutionised the open fryer sector by incorporating wireless digital connectivity across the Evolution Elite range. Working in conjunction with a third-party program, the wireless technology can be set up to alert an operator to start a cook based on predicted demand or in some cases automatically add stock to the next delivery. Both features form an integral part of the new ‘ARM’ controller that is now featured across the Evolution Elite range, delivering outstanding control and consistency, through an easy-to-use, touch sensitive interface.

With oil quality being a key industry topic, Henny Penny has also introduced a built in ‘Total Polar Material’ (TPM) tester as an optional added extra on the Evolution Elite fryers. As the texture, taste and colour of fried food is directly related to the quality of the oil, implementing an oil monitoring system can significantly reduce wastage and more importantly ensure customers’ expectations for their food is exceeded.

The built-in TPM tester determines the condition of the oil by measuring the content of TPM’s in the make-up of the oil, alerting the operator when a change is required. This technology combines with the existing state-of-the-art filtration system and Oil Guardian, a feature designed to consistently monitor and top-up the level when required, helps to give the Evolution Elite range one of the most efficient oil consumption rates of any commercial fryer.
