East Sussex County Council has nailed its colours to equipment brand Rational after pledging to install the manufacturer’s kit for all its forthcoming kitchen refits.
The council, which is responsible for delivering 20,000 school meals a day, is currently rolling out the new Rational SelfCookingCenter whitefficiency alongside many older Rational units already installed in its facilities.
East Sussex County Council first installed Rational three years ago when older kitchen equipment needed to be replaced and has since expanded the relationship after changing many of its dining centres into production kitchens.
Previously it transported food in hot boxes from central production kitchens to school dining centres, but the introduction of the Rational SelfCookingCenter has allowed it turn these dining centres into production kitchens in their own right.
“We take out the old equipment of traditional cooker, fryer and steamer and replace them with one or two SelfCookingCenters and an induction hob,” explains Julian Breeds, senior contract officer for catering at East Sussex County Council.
“This is all we need in the kitchen now for a complete school meals service. We can cook everything from rice, pasta, roast meats, vegetables, bread, jacket potatoes and puddings in the SelfCookingCenter.”
The council’s policy has been to install new equipment outside of term time, with Rational chefs taking cooks through the technology once the schools are open.
