Customers flock for roast chicken


Standex Food Service Equipment has supplied an NMK rotisserie oven and an HDD-2 heated holding drawer unit to the Jack O’Shea butchery concession, within the food hall at Selfridges’ Oxford Street store, London.

Jack O’Shea’s 40ft butchery counter in the Selfridges’ food hall offers an extensive range of high quality fresh meat and poultry for the butcher’s many discerning customers. To meet customer demand for freshly cooked meat, the butcher has purchased the rotisserie oven and heated holding drawer unit.

Jack O’Shea’s cooked food offer includes a variety of free range chicken, with corn fed, smoked and marinaded birds proving particularly popular with customers. The concession sells up to 150 cooked birds per week. The rotisserie is also used to roast Filipino-style suckling pig, to special order.

Manufactured by BKI, the NMK rotisserie oven is particularly suited to retail butchery operations. Its compact design and small footprint requires a minimum of counter space.

The oven has the capacity for nine birds, which can be cooked in a little over an hour. Energy efficient heating technology delivers tender, succulent chicken with crispy skin. User friendly manual programming ensures consistently high standards of cooked food quality.

Once cooked, the chickens are transferred to the APW Wyott HDD-2 holding drawer unit, which is conveniently located beneath the rotisserie. The holding unit’s thermostatic temperature control and humidity regulation ensure that birds remain moist and tender prior to service. The drawers also provide additional capacity during peak trading periods.
