Portsmouth-based Cream Supplies has added two new micro strainers to its portfolio.
The new Superbags are available in either a 100 or 200 micron option and are designed to ensure consommés, infusions, stocks and broths can be clarified well.
However, they have multiple uses beyond this, including straining infusions and decanting wines. They can also be filled with purées and immediately squeezed to release a solids-free liquid, a technique that can also be used to extract fresh almond milk.
Alternatively, gravity will slowly release liquids from purées placed in the bags to make flavoured ‘waters’.
Superbags have a 2 litre capacity and are made from dishwasher-safe nylon strands, so can be safely re-used for different foods without flavour contamination, said to provide a practical and hygienic alternative to muslin.
