Catering equipment distributor Cornwall Catering Equipment, part of the Allsop & Pitts group, has teamed up with Charvet at a recent local gastropub installation.
The dealer designed and installed the new kitchen at the Cornish Arms in Tavistock, working with owners John and Emma Hooker to specify a Charvet cooking range comprising a 10kW gas chargrill, two 5.25kW steel planchas with water flushing, four 5kW induction hobs, a 3kW rise and fall salamander, a 15kW 16litre single tank fryer, two 8kW 7litre twin pan fryers and two refrigerated drawers.
John Hooker said that the 17th century coaching inn at the foothills of Dartmoor has become a “big piece of both our souls”.
He revealed: “Emma and I wanted to create a pub where we would want to spend time and we have truly lived it; sleeping above the pub, renting our house to raise cash to invest and our son was also born here.”
When the time was right to invest in a new kitchen, John chose a Charvet modular heavy-duty wall suite as the cooking range.
He said: “We needed to reinvest, and I wanted induction because of the cost savings and because it creates a great environment to work in. I also wanted the staff to be proud to come to work in the kitchen.
“We first thought it was out of our price range but Charvet turned out to be a perfect fit.”
Hooker further praised: “Don’t be intimidated by Charvet – it is not just for elite restaurateurs and Michelin-starred restaurants.
“Charvet kit will work for any business, whether you are a pub like we are, or a Michelin restaurant, there is a fit for us as chefs.
“There is minimal cost in maintenance, nothing ever goes wrong. Our utility bills have gone down 10-fold thanks to the induction.
“Since we installed Charvet, we have been churning the covers out and not looked back. We were even able to add another plancha and more refrigeration to cater for a new breakfast service!”
