Compact combi-oven introduced by FEM


Glasgow-based catering equipment importer Foodservice Equipment Marketing (FEM) is introducing the Alto-Shaam CTP20-10E PROformance Combitherm oven to the UK.

The roll-in cabinet model is said to provide high volume production in a space-saving footprint. It is compatible with the Alto-Shaam integrated rack management system, making it suitable for both on-demand cooking and cook/chill/retherm banqueting.

Measuring 906mm (w) x 1,072mm (d) x 2,012mm (h), the unit can accommodate 20 GN 1/1 pans. With the installed EcoSmart technology it is claimed to be 40% more energy efficient, using 80% less water and overall giving 60% higher productivity compared to conventional cooking appliances.

Individual shelves can be programmed with separate timers, enabling different types of food to be cooked simultaneously.

The CTP20-10E can be upgraded with optional features as required. These include ProPower, which can deliver a heat boost to accelerate production or provide rapid temperature recovery. Other optional features are a grease collector with a 5 litre capacity and a ventless hood, which prevents grease droplets from escaping.

Additionally, an optional smoker attachment allows for both hot and cold smoking.

Using a touch-screen interface, the PROtouch control panel includes customisable recipe management and one-touch programming. Recipes can be transferred to the unit by USB stick, along with system updates and diagnostic data.

The LED-illuminated door handle provides visual feedback about the current status of the cooking program, to monitor the progress of the food.

Humidity can be set anywhere between 0%-100% in order to increase quality, texture and yield. The five-speed reversing fan delivers airflow throughout the interior for product browning and finishing.

Safety features include Safevent, which quickly removes steam from the interior before the program finishes. Meanwhile the triple-glass door keeps the outer surface cool to the touch. The frame of the door is also fitted with LEDs to help illuminate the interior.

Its zero clearance design means the Combitherm oven can be placed next to any piece of equipment on the line, helping to save space.

Using the Combiclean Plus tablets in conjunction with the five automated cleaning programs enables operators to keep the oven in peak condition. An retractable spray hose is accessible from the front.

The list prices for the PROformance 20-10E start at £20,280.
