Commercial Kitchen reveals Innovation Challenge contenders

The Commercial Kitchen trade show, which returns to the NEC Birmingham on 6-7 June, has confirmed its Innovation Challenge Awards entries for 2017. The awards recognise the best new catering equipment, devices and tech for kitchens of the year.

Middleby UK, Electrolux Professional, Interflow UK, rexmartins, Rational UK, and TME Thermometers are among the 22 manufacturers and suppliers looking to win over visiting buyers to secure their place in the show’s Innovation Challenge final.

Voting opens at the Innovation Challenge Gallery from 10am on opening day and will run until 4pm (6 June). The exhibitors that have secured the most visitor votes will then be invited to ‘pitch’ their new innovations in the live final the following day. They’ll have just 90 seconds to impress this year’s expert industry judges, plus an audience of visiting buyers. Pitches start at 11.45am on Wednesday 7 June, with the results to be announced at 2pm.

Companies hoping their products will come away with a coveted gold, silver or bronze innovation award include:

Apicbase is showcasing Apicbase NV – its food management software and food photography studio. This all-in-one kitchen management solution enables users to centralise and standardise ingredients, allergens, recipes and menus – optimising procurement, menu planning and customer communication (stand E12).

Carpigiani UK is showcasing The ‘Ready’. This artisan gelato machine boasts nine automated programmes and is capable of mixing dry (powder/paste) and wet bases, using specific heated pasteurising or batch freezing cycles in the same cylinder (stand H10).

Comark Instruments is showcasing Kitchen Checks Pro – its new approach to taking HACCP temperatures and performing HACCP checks. It includes: Comark’s Bluetooth Pocketherm for wireless recording; the free Kitchen Checks App; and a cloud-based dashboard with free storage for the recorded data (stand J12).

Cuisinequip is showcasing LoCooker. This compact water-based reheating system can be used in place of separate equipment for sous vide, combi steaming and bain marie cooking methods. It is powered from a 13A socket, doesn’t need an external water supply or external ventilation, and it fits on a counter-top or under-counter (stand A1).

Electrolux Professional is showcasing SpeeDelight – its new accelerated cooking solution. The unit’s contact plates combine with infrared and microwave technology, whilst the upper plate is designed to settle on food with just the right amount of pressure – opening automatically when ready (stand F12).

Interflow UK is showcasing its new launch – ecoAzur from GIFActiveVent. It monitors heat and vapours from cooking (using optical and thermal sensors linked to the BMS) to adapt airflow and ensure optimal air quality and ergonomics (stand D36).

Interflow UK is also showcasing Rondo from plasmaNorm – the first modular system for generating plasma (used to purify air). It can be assembled in any length and size to suit any extraction system and the electrodes within the Rondo last significantly longer than traditional units (stand D36).

Jestic Foodservice Equipment is showcasing the Winston CVap CAC503. This ‘controlled vapour’ appliance (run from a 13A socket) offers the latest in slow cooking technology – providing precision control over the temperature, moisture and texture of the food (stand A26).

MCS Technical Products is showcasing MCS FlashGRILL. It uses a patented indirect heating system – elements are immersed in diathermic fluid (heat transfer oil) inside a sealed chamber – which reduces energy consumption by up to 70%. It offers high output, heavy duty cooking on all 19 models, 16 of which can use single or three phase power, with four models on 13A socket (stand B26).

Meiko UK is showcasing UPster rack transport dishwashers. They feature heat recovery as standard, do not need overhead ventilation, doors open out (not up), while the eye-level illuminated touchscreen controls feature user-friendly symbols that only display the functions currently in use (stand B8).

Middleby UK is previewing its Let’s Cook Cloud Solution – a cloud ecosystem which enables real-time overview of an oven fleet. Operators can access and monitor their ovens remotely on any device; distribute recipes and software; prevent operational issues proactively; and get consumption and HACCP overview (stand H2).

my-Kaboodle is showcasing its remote monitoring system. The phone based app can also be used on tablets and PCs, and allows the remote reading of refrigeration cabinets, walk in freezers and chilled displays etc. It displays live data, as well as holding historic recordings allowing users to print off hourly, daily, weekly or monthly temperature reports remotely (stand I14).

PKL Group (UK) is showcasing its new Garbage Guzzler, which can reduce overall waste by up to 90%. This onsite aerobic waste digester can digest organic waste (up to 200kg or 400kg depending on the model) in as little as 24 hours – turning it into soil improver, biomass fuel, or a material that can be disposed of in general waste (stand F10).

Rational UK is showcasing its Rational SelfCookingCenter XS combi-oven. It offers full Rational power, intelligence and efficiency despite its minimal dimensions (it only requires 0.2metre3 space). The 2/3GN unit covers 95% of all the usual cooking appliances; it grills, steams, pan-fry, gratinates and bakes (stand F2).

Reco-Air Halton is showcasing Reco-Air. Its patented technology enables complete recirculation from cookline, without a route to atmosphere. It significantly reduces fire risk, as there are no lengthy duct runs, negating costly specialist duct cleaning and simplifying planning applications (stand C8).

Retigo is showcasing its next generation Retigo Vision combi oven. Available in six sizes, with advanced boiler or advanced direct steam, all models feature economical auto-cleaning. They offer precise temperature and steam control, even cooking, high steam saturation and multi cooking possibilities (stand F15).

rexmartins is showcasing its RMB Fresh Air Heat Pump. It requires no external condensing unit, so it can be easily installed and eliminates the hassle of extensive planning permission. The only requirement is a 13amp electrical supply and a small space for the exhaust flexible line to sit, which will enable the extraction of heat load (stand H26).

Roller Grill is showcasing its PIS30 Professional Induction Hob, with 20 power setting. It will work at full power for the whole working day without overheating and cutting out. The induction zone is 280mm wide and extends approx. 30mm above the plate, so that the cooking pan can be worked on without loss of heat (stand A14).

Testo is showcasing its new Testo Saveris Restaurant solution. Combining intuitive software and precise measurement technology, it aims to make daily job processes noticeably easier, safer and more efficient. It includes a fully integrated temperature monitoring system, and control unit(s) allowing all paper documents to be converted into a digital format (stand D15).

TME Thermometers is showcasing CA2005-PKW – its new fully-waterproof thermometer kit. Including dishwasher-safe CAP-C colour-coded needle probes, it’s a practical, low cost method of preventing bacterial cross contamination in the kitchen (stand D8).

TME Thermometers is also showcasing its MM7000 Combined Recording System, which pairs Bluetooth barcode scanners with fixed wireless monitors to deliver fully integrated paperless spot checks and 24 hour monitoring (stand D8).

True Refrigeration is showcasing its New Refrigerated Prep Table. Featuring an environmentally friendly and highly energy efficient Hydrocarbon refrigeration system, the zero clearance front discharge design, for built-in application, maximises limited kitchen space (stand C15).
