CESA has released four open educational resources courses for everyone to freely access.
The four mobile-formatted PDF courses are produced by Peter Jarrett, author of the City and Guilds Food Safety Manual. Each course is linked to the specialised Hospitality Learning Network platform to access the interactive features and videos, once the student has registered for a free account.
The Carbon Management and Food Safety modules comprise four elements, all of which are free to study. Each of the modules feature interactive functionality, quizzes, a glossary and video content.
The first, Carbon Management Awareness, includes a video outlining the issues that cause global warming and the importance of mindful of energy consumption.
The second, Food Safety – Foundation Level One, drives awareness of the dangers of food poisoning, defines simple essential rules to follow and focuses on how to handle different types of food.
Thirdly, the Food Safety – Food Safety Manual Level Two course is designed for people who are preparing and handling food and highlights safe methods of handling, storing, preparing and serving food.
Completing the set, the fourth available course is Allergens and Intolerants – Food Preparation and Front of House Communication. Through an understanding of allergies and intolerances the learner should achieve the knowledge of how to manage these hazards in an operational unit and also from the large company’s perspective for the implementation of HACCP.
All the courses can be branded to each participating company to support customers and to drive traffic to a firm’s website.
