CEDA to restructure Technical Support Group

CEDA technical support advisor Peter Kay is calling for volunteers to create the association's Technical Support Group core committee.

CEDA will be restructuring its Technical Support Group (TSG), the association’s technical support advisor Peter Kay revealed during its annual conference last week.

Kay told delegates attending the Technical Forum at the Majestic Hotel in Harrogate that the overhaul is taking place in order to get more people involved.

He said: “It is intended to have a core management committee of people who have good knowledge and experience on service management, gas, electrical, plumbing and installations.

“This would be supplemented with experts in other areas such as ventilation, refrigeration, project management, accelerated cooking etc who could be called upon for help.”

Kay detailed: “It is envisaged that these experts would only need be involved in meetings when their special knowledge is needed for an agenda item, however, they would always be welcome to take part in all meetings if they wished. They can also of course suggest agenda items.”

One of TSG’s recent endeavours was to publish a document entitled ‘Guidance on best practice for the installation, operation and maintenance of solid fuel fired catering equipment in commercial premises’. Kay reported that the CEDA board suggested the group should prepare further authoritative documents along the same lines aimed at end users but also possibly designers and sales staff.

To date the TSG has drafted three documents which are currently awaiting final clearance from the CEDA board, covering: warewashing – selecting the right machine, designing the best system, chemicals, cross contamination and maintenance; food preparation including vegetable, fruit, meat, fish, pastry, hygiene, waste and safety; and refrigeration in commercial kitchens including storage temperatures, bulk storage, mise en place storage, displays, wine storage, blast chillers and freezers, pros and cons of different types of refrigeration, ambient temperatures and humidity and temperature monitoring.

TSG has previously published 36 guidance documents on topics ranging from gas regulations to warranty service level agreements and 44 standard documents on subjects including fryer safety certificates and design risk assessments.
