Carpigiani’s latest innovation – the Freeze&Go, a compact countertop professional batch freezer – had its worldwide launch at this year’s Commercial Kitchen show, taking a prestigious ‘Gold’ in the event’s Innovation Challenge in the process.
The new Freeze&Go can produce 5kg of fresh gelato or sorbet per hour, and up to five portions in 6 minutes, despite its compact 300mm width.
Carpigiani has created the new unit to allow chefs to create fresh small batches of gelato and diverse dessert offerings, on demand and without wasting kitchen space. The Freeze&Go has been designed to maintain the optimum temperature and mix consistency to create multi-textured desserts or hors d’œuvre.
Equipped with a single-phase power supply, the model is said to be virtually silent and easy to clean.
The batch freezer has a classically shaped, retro design with a cream finish which reflects Carpigiani’s extensive brand heritage. The finish is also designed to make the Freeze&Go suitable for placement in a front of house dining area as well as a commercial kitchen, allowing operators to produce gelato in front of diners.
The mixing cup is designed to be removed easily for cleaning, and with additional mixing cups available, chefs are able to create an assortment of ready to serve flavours.
