Contract catering company BaxterStorey has put one of Frima’s VarioCooking Centers into the kitchen it manages for British American Tobacco in Southampton.
The sale and installation was overseen by Bristol-based distributor Provincial Design, which specialises in heavy duty catering equipment.
BaxterStorey is now using the 100-litre unit to produce about 40% of the freshly prepared meals that it serves on site. More than 550 people use the restaurant facilities each day.
BaxterStorey’s head chef, Richard Whiting, said the unit is ideal for pressure cooking, deep frying, shallow frying, sautéing and boiling rice and insists the company is benefitting from its precision and automatic cooking processes.
“We can stew 30 kilos of shin of beef for three hours, knowing the FRIMA won’t allow it to catch, and will cook it perfectly,” he said. “With deep frying, we know that the thermostatic control will keep the oil at exactly the right temperature, and the unit will lift the food out when it’s done.”
The VarioCooking Center combines a bratt pan, a kettle pan, a griddle, a pressure cooker and a deep-fat fryer. Frima claims it is “three times as fast” as conventional cooking appliances.
As well as working with Frima, Provincial Design also has partnerships with brands such as Foster, Counterline, Falcon, Manitowoc, Bravilor Bonamat, Instanta and CED.
