BKI oven boosts chicken sales for John Lewis


Standex Food Service Equipment has supplied a VGG5 rotisserie oven to The Place to Eat customer restaurant at the John Lewis store, Milton Keynes.

The retailer’s Place to Eat 280 seat restaurant delivers a full range of hot dishes and popular meals. The family orientated restaurant places emphasis freshly cooked quality product, competitive pricing, convenience and speed of service.

To meet demand for freshly cooked chicken, Standex FSE supplied a five-spit electric rotisserie oven, manufactured by its sister company, BKI. The rotisserie has the capacity to cook up to 20 birds in a little over an hour, whilst user friendly programming ensures consistently high standards of cooked food quality.

The oven is prominently positioned in the restaurant’s service area, with its large curved picture window and illuminated oven chamber maximising the visibility of the rotating chickens for kitchen theatre, promoting impulse purchases. The rotisserie incorporates a pass through feature, whereby raw product is loaded from the kitchen side of the oven and cooked product is unloaded from the service side, eliminating the possibility of food cross contamination.

The restaurant’s chef, Dale Kilby, cooks one or two batches of whole chickens every day, carving them into half or quarter birds for service. He stated that roast chicken, particularly honey and mustard marinaded chicken, is one of the restaurant’s most popular menu items, with customers returning regularly. During periods of peak demand, the rotisserie’s meat forks are replaced with baskets for cooking pre-portioned chicken and sausages.

Kirby remarked:“The BKI rotisserie delivers consistently high standards chicken with crispy skin, time after time. The oven’s holding function allows us to maintain product at optimum temperature and freshness prior to service.”

He added: “Standex FSE’s Development Chef, Darren Massey, provided comprehensive equipment familiarisation and training, as well as working closely with our restaurant team in menu development.”

Catering Manager, Tony Peppiatt-Righelato, cited a significant increase in sales: “Parents have embraced roast chicken has a healthy option and we have seen a 300% increase in sales of children’s meals since we installed the rotisserie oven.”
