Imperial Catering Equipment is raising the temperature in commercial kitchens to 400°c with the introduction to the UK of the Bertha charcoal oven.
The ovens are being pitched as the perfect way of creating a chargrilled caramelised flavour even within enclosed, small, kitchens.
“ The Bertha oven came out on top every time over a chargrill, especially in the evenness of the cooking process and moisture retention, which produced better tasting food retaining most of the moisture. A much better mouth feel, greater flavour profile and superior caramelisation,” said Tim Gibson, head chef of the Black Lion Restaurant in London
The Bertha generates and maintains its temperature of up to 400°c with the use of vents at the bottom of the oven and in the chimney that regulate airflow through the oven.
“It’s quite simply the hottest thing in the kitchen. The secret of the Bertha is its enclosed charcoal grill that ensures food retains all its natural moisture and flavour. So you get unbelievably succulent, chargrilled food every time,” said Andy Piggin, sales director for Imperial Catering Equipment.
