Creeds has launched its range of Dell’Oro oblique fork mixers for bakers and catering operators to meet the growing demand for authentic, continental breads.
The company said market data supports the assertion that baked goods market is one of the fastest growing.
A recent Global Industry Analysts report states: “The global baked goods industry is expected to exceed $310 billion in 2015,” highlighting a rapid recovery following the economic recession and a strong growth record over recent years.
This is supported by a MarketLine report saying, “Market volume is forecast to exceed 75 billion kilograms in 2014 and artisanal bread and rolls represent the leading market segment, accounting for almost 52% of the overall market in terms of value.”
With crafted breads proving ever-popular with the consumer, operators who want to keep their customers happy and coming back for more need to invest in the right equipment if they are to produce a truly authentic, continental creation.
Dell’Oro oblique fork mixers, supplied by Creeds, are a favoured style of mixer over spiral with bakers who make artisan bread with a typically higher hydration, such as genuine French baguettes and Italian ciabatta.
To achieve the true characteristics of these types of bread you need dough with a higher hydration that has been kneaded less, which will produce larger, more randomly distributed holes and a more open structure.
Baguette dough has no less than 60% hydration while ciabatta is often as high as 85%.
As a result, this type of dough can be sticky and difficult to work with, hence the use of a fork mixer, which will also ensure that the dough does not become too warm.
The fork mixers supplied by Creeds all feature 2-speed motors and two timers.
On request the models with 80kg, 110kg and 130kg capacity can be manufactured with a free-spinning bowl equipped with an adjustable brake.
Fork, bowl and guard are all made in stainless steel and all models are mounted on castors, with brake.
The oblique fork mixers are available in five sizes: bowl capacity in kg of flour: 30kg, 50kg, 80kg, 110kg and 130kg.
