Catering equipment supplier Hatco has added Alyn Williams’ latest culinary venture to its list of customers after providing its QTS-2 salamander for his new restaurant.
Williams, who made his name after holding top chef positions with Marcus Wareing and Gordon Ramsay, recently opened his first restaurant: Alyn Williams at The Westbury.
Despite inheriting an extremely good kitchen set-up, he made some equipment adaptations, including purchasing the Hatco Salamander.
“I knew I would need a top quality grill, so I looked to source a top one to meet our needs,” said Williams, who opted for the Quick-Therm Salamander (QTS-2).
“Not only can I use it for all my grilling needs, but I can use it for a number of other purposes such as glazing and caramelising,” he added. “I make a fillet of hake as part of our lunch menu which comes with seaweed butter. The salamander is great to caramelise the butter. It’s also great for warming dishes through.”
US-based Hatco claims the QTS-2 is the ultimate, energy-conscious replacement to traditional models as it switches itself on only when a plate or pan is put beneath it. Removal of the plate turns off the heating elements.
“I really save on energy costs in the process because I don’t have to use it on its maximum heat setting and I don’t have to have it turned on all the time,” said Williams.
Hatco manufacturers a range of cooking equipment for the food service industry. The company was founded more than 60 years ago and five years ago its employees assumed 100% beneficial ownership of the company after it implemented an Employee Stock Ownership Plan.
