Equipment manufacturer Alto Shaam has launched a Combitherm combi oven that features a smoker option.

The oven, which is sold in the UK through distributor FEM, allows chefs to hot or cold smoke a product with authentic wood smoke and then switch back to conventional combi oven cooking when required.

It says the option will suit those who like to have precise control over the depth of smoking of their meats, fish and cheese, but don’t have the space for a separate smoker oven.

After smoking, a single cleaning cycle removes all smoke residue from the oven so it can be used as a conventional combi oven with no transfer of flavour.

It says that another new feature — the Gold-n-Brown — setting, gives six precise browning levels to finish food and get an attractive gratinated finish.
