Renowned chefs from Alpha LSG visited MKN in Wolfenbuettel, Germany and attended the MKN study tour on ‘In Flight Culinary Excellence’.
The chefs from Manchester, Heathrow and Gatwick Airport gave some fantastic feedback on this trip.
According to John Sandelands, head chef, Alpha Manchester Airport: “The FlexiChef has real potential to become the best piece of equipment in our kitchen. The end product, whether it was soup, risotto or beef cheeks, was cooked to perfection, with a clean fresh taste. We work to deadlines and the ability of the machine being able to clean itself with only a small amount of knowledge from the operator is fantastic.”
Marty Gallagher, head chef, Alpha Gatwick Airport added: “It was indeed inspirational and everyone was inspired by the technology – overall a worthwhile introduction to MKN. Most impressive for me was the accuracy and capabilities of the MKN ovens. The demo of overnight cooking raises new possibilities to us since we need to catch up on these trends.”
While Keith Phipps, head chef at Alpha Heathrow commented: “I thought that trip went very well. Very interesting factory and well run operation. The hosts were excellent and kept it all in a non-pressured environment. The detail in the training and discovery of what the equipment can do was very interesting. We learnt about very short and also very long processes, with both, the results and quality of the products was amazing.
“The new technology for smoking food was quick and easy and again the results were excellent. The availability to download info into the touch panels can only help to get a good consistency of the end product. In all a very eye opening and interesting 2 days. Thanks to MKN for such good hospitality.”
