Target Catering Equipment has fitted a MAM Forni combination gas and wood oven at Cantina Vinopolis Restaurant on London’s Bankside.
MAM Forni ovens are manufactured in Modena, Italy by the Malaguti family, but are sold and installed in the UK by Gloucester-based Target.
Target boss David Pedrette began working with the brand several years ago after spotting the growth potential for wood-fired pizza ovens in the UK and recognising that a rotating traditional oven could be as efficient at producing thin base pizzas as the conveyor belt production system.
Wood fired ovens face some antiquated regulations relating to coal fired appliances and smog generation that restrict the use of wood burning appliances in smoke control areas.
“As a result of these restrictions in London the combi gas and or wood fired oven at Vinopolis has been installed as a showcase piece of equipment,” he explains. “It has a gas-fired, fully automatic regulated temperature control system ensuring clean burn and perfect results with the option to burn a smokeless fuel.”
Target has become an expert in installing the ovens over the years, with the main challenge being that each unit can weigh more than 1.5 tonnes.
“They are not a box shifter’s product by any means,” notes Pedrette. “What makes these ovens unique is the design and shape of the oven roof and flue arrangement perfected over centuries in Italy. They can also be personally customised by their owners. However, the oven at Vinopolis is naked and raw as it comes straight from the factory, which is not often seen.”
